There is a very inspirational story about an elderly woman that was making funeral arrangments and told her children she wanted to be buried with her fork because as a child she was told to "save the fork" because the best was yet to come. For me thats the best part of a meal, dessert but also it applies to my faith. On earth we have a wonderful life but the best is yet to come when we get to the kingdom of heaven! My Signature Chocolate Chippers
2 cups butter, set out at room temperature
1 cup l brown sugar, packed
1/2 cup granulated sugar
2 teaspoons pure vanilla extract, I only use Mexican vanilla
3 large eggs at room temperature
2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon kosher salt
Sprinkle of cinnamon
2 bags MILK chocolate chips
Preheat the oven to 350 degrees.
Cream the butter and two sugars until light and fluffy. Add the vanilla, then the eggs, one at a time, and mix well. Sift together the flour, baking soda, cinnamon and salt and add to the butter with the mixer on low speed, mixing only until combined. Fold in the chocolate chips.
Drop the dough on a baking sheet lined with parchment paper, using a 1 3/4 inch- diameter ice cream scoop or a rounded tablespoon. Dampen your hands and flatten the dough slightly. Bake for exactly 10 minutes (the cookies will seem underdone). Remove from the oven and let cool slightly on the pan, transfer to a wire rack to cool completely.
